Ingredients
  

For the Pasta Dough
  • cups (300 g) all-purpose flour or Italian "00" flour
  • 3 Large eggs
  • 1 tablespoon olive oil
  • ½ teaspoon salt
For the Butternut Filling
  • 2 Cups roasted butternut squash puree
  • ½ Cup whole milk ricotta cheese
  • ½ Cup ground nutmeg
  • ¼ teaspoon ground nutmeg
  • ½ teaspoon dried sage
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
For the Sage Butter Sauce
  • 4 tablespoons unsalted butter
  • 8 fresh sage leaves
  • 2 tablespoons grated Parmesan cheese
  • Fresh parsley, chopped

Method
 

  1. Combine the flour and salt in a large bowl. Add the eggs and olive oil, then mix until a dough forms.
  2. Knead the dough for 8–10 minutes until smooth and elastic.
  3. Wrap the dough tightly and let it rest for 30 minutes at room temperature.
  4. Mix the roasted butternut squash, ricotta, Parmesan, nutmeg, sage, salt, and pepper until smooth.
  5. Roll the dough into thin sheets using a pasta machine or rolling pin.
  6. Place small spoonfuls of filling onto one sheet of pasta, spacing them evenly.
  7. Brush water around each mound of filling, place another sheet on top, and press out any air.
  8. Cut the ravioli using a ravioli cutter or stamp.
  9. Bring a large pot of salted water to a gentle boil.
  10. Cook the ravioli for 3–4 minutes, or until they float to the surface.
  11. Meanwhile, melt the butter in a skillet over medium heat and cook the sage leaves until fragrant and lightly crisp.
  12. Transfer the cooked ravioli directly into the sage butter sauce and toss gently.
  13. Sprinkle with Parmesan cheese and parsley before serving.

Notes

  • Resting the dough makes it easier to roll and improves texture.
  • Avoid overfilling the ravioli to prevent them from bursting during cooking.
  • Freeze uncooked ravioli on a baking sheet, then transfer to freezer bags for up to 2 months.
  • Serve with extra Parmesan cheese and freshly cracked black pepper.
  • Use fresh sage for the most authentic flavor.
