For the Ricotta
  • cups whole milk ricotta cheese
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon grated Parmesan cheese
  • teaspoon lemon zest
  • ¼ teaspoon kosher salt
  • ¼ teaspoon black pepper
For the Tomato Topping
  • 2 cups cherry tomatoes, halved
  • 2 tablespoons fresh basil, chopped
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon balsamic glaze (optional)
  • ¼ teaspoon salt
  • ¼ teaspoon blackpaper
For Serving
  • 1 French baguette, sliced into 12 pieces
  • 1 olive oil (for brushing bread)
  • Extra basil leaves for garnish
  • Honey or hot honey (optional)

Method
 

  1. Preheat the oven to 400°F (200°C).
  2. Arrange the baguette slices on a baking sheet and lightly brush each slice with olive oil.
  3. Toast the bread for 8–10 minutes, flipping once halfway through, until golden and crisp.
  4. In a mixing bowl, whisk together the ricotta, olive oil, Parmesan, lemon zest, salt, and pepper until smooth and creamy.
  5. In another bowl, combine the tomatoes, basil, olive oil, balsamic glaze (if using), salt, and pepper.
  6. Let the tomato mixture rest for 10 minutes so the flavors blend together.
  7. Spread a generous layer of whipped ricotta over each toasted bread slice.
  8. Spoon the tomato mixture evenly over the ricotta.
  9. Garnish with extra basil leaves and drizzle with honey or hot honey if desired.
  10. Serve immediately while the bread is crisp.
