Ingredients
  

For the Pasta
  • 2 cups (260 g) semolina flour
  • cup (160 ml) warm water
  • ½ teaspoon fine sea salt
For Serving (Optional)
  • 2 tablespoons extra virgin olive oil
  • ½ cup grated Pecorino Romano or Parmesan cheese
  • Fresh basil or parsley, chopped
  • Freshly ground black pepper

Equipment

  • 1 Large mixing bowl
  • 1 Clean work surface
  • 1 Bench scraper or dough scraper1
  • 1 Butter knife or orecchiette knife
  • 1 Large pot
  • 1 Slotted spoon or spider strainer
  • 1 Set measuring cups
  • 1 Set measuring spoons
  • 1 Kitchen towel or plastic wrap
  • 1 Baking tray

Method
 

  1. In a large mixing bowl, combine the semolina flour and salt.
  2. Gradually add the warm water while mixing until a shaggy dough forms.
  3. Knead the dough on a lightly floured surface for 8–10 minutes, until smooth and firm.
  4. Cover the dough with a kitchen towel or plastic wrap and let it rest for 30 minutes at room temperature.
  5. Divide the dough into 4 portions.
  6. Roll each portion into a rope about ½ inch (1.25 cm) thick.
  7. Cut the rope into small ½-inch pieces.
  8. Using a butter knife, drag each piece across the work surface, then turn it inside out over your thumb to create the classic orecchiette shape.
  9. Place the shaped pasta on a lightly floured baking tray.
  10. Bring a large pot of generously salted water to a boil.
  11. Cook the fresh orecchiette for 4–6 minutes, or until they float and are tender.
  12. Drain with a slotted spoon and toss with olive oil, your favorite sauce, or broccoli rabe and Italian sausage.
  13. Finish with grated Pecorino Romano or Parmesan cheese and freshly ground black pepper.

Notes

  • Semolina flour creates the authentic chewy texture of traditional orecchiette.
  • Resting the dough makes it easier to shape.
  • Dust the shaped pasta lightly with semolina to prevent sticking.
  • Fresh orecchiette can be refrigerated for 2 days or frozen for up to 2 months.
