  • 1 cup dry orzo pasta
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 4 cups fresh baby spinach
  • 2 cups vegetable broth
  • ½ cup grated Parmesan cheese
  • 2 tablespoon fresh lemon juice
  • 1 tablespooen lemonzest
  • 1 tablespoon butter
  • ½ tablespoon salt
  • ¼ tablespoon blackpaper
  • 2 tablespoon chopped fresh parsley
  • Red pepper flakes

Method
 

  1. Step 1

    Heat olive oil in a large skillet over medium heat. Add minced garlic and cook for about 30 seconds until fragrant.

    Add the dry orzo and toast it for 2–3 minutes, stirring frequently

    Pour in the vegetable broth and Italian seasoning. Bring to a gentle boil.

    Reduce the heat to low and simmer for about 10–12 minutes until the orzo is tender and most of the liquid has been absorbed.

    Stir in the fresh spinach and cook until wilted.
  6. Step 6

    Add butter, Parmesan cheese, lemon juice, and lemon zest. Mix until creamy.

    Season with salt and black pepper to taste.

    Garnish with chopped parsley and red pepper flakes if desired. Serve immediately.
